How we brought Mexico to Prague
Since the very beginning, the Chef Rodrigo Flores has been with Las Adelitas. At first, he tried tenaciously to enforce traditional Mexican flavors in several restaurants in Prague. However, none of the restaurants allowed him to prepare dishes from traditional recipes. He was always forced to keep up with commercial and mainstream Mexican dishes. So, Rodrigo decided to kiss social security goodbye after two years and he followed his true Mexican heart (and also his eager plan) as a freelancer.
Las Adelitas Delivery is born
Rodrigo with his friend Patricio started Las Adelitas Delivery - an amateur delivery service of authentic Mexican food. The food was cooked daily by Rodrigo in his very home and they would deliver the food to homes and offices themselves, using the subway or tram. The back-then-unknown-but-traditional tacos, as well as other dishes, were first delivered to friends and acquaintances.
Beginnings are always rough but the growing demand for their great food convinced the two that they wouldn’t stick to amateur delivery services forever. In the 18 months of the existence of Las Adelitas Delivery, they delivered hundreds of burritos, quesadillas and tacos to lovers of traditional Mexican cuisine. The desire and need for Mexican cuisine in Prague didn’t stop; their inbox was always full of orders. After all, no real authentic Mexican restaurant was born in Prague until then, despite many attempts.
Las Adelitas family expansion
Therefore, Rodrigo and Patricio took on more partners in the summer of 2009 - Fernando helped with the expansion of the delivery service into a full-fledged restaurant; David created the visual concept of the very first pure Mexican business in Prague. A few months later, today’s executive chef Luis joined the four original members. It is his and Rodrigo’s art that is the essence of Las Adelitas cuisine.
After months of planning, demolishing, building and hanging out, the first real Mexican restaurant in Prague was born.Las Adelitas on Americká street welcomed its first guest in October 2009.
